Many people ask us what the difference is between COCOA and CACAO. Some believe it is just how it is expressed in different languages however, for many it is this subtle difference in spelling that sets the products miles apart. As with so many things today, I find that even the experts disagree, so after reviewing all the opinions available, this is our take.

In naming the Martinnaise product, we chose to go with the general consensus that cocoa has been exposed to heat such – as possibly roasting – and chemical processes such as alkalizing as well as in some cases, the addition of sugar or some kind of sweetener and more.

Martinnaise Natural Unsweetened Cacao is a raw natural product that has not been roasted or alkalized, has absolutely nothing added to it in the form of sweeteners, sugars, free-flowing agents or preservatives.

Our Cacao is rich in anti-oxidants and not as bitter as the generally available cocoa in most retail stores. Because of this, you can make a delicious cup of hot chocolate with it.

Martinnaise Unsweetened Natural Cacao can be used in all the same applications where you would normally require cocoa or cacao, but for those to whom what they eat is important, you can enjoy it knowing that it is as nature made it!
